Jun 11th 2009 01:10 pm Fiesta Salmon with Mexican Flavors

Many evenings while I am deciding our dinner menu or I am making our supper – I will tweet three simple words “What’s for dinner?” A lot of followers will tweet back an answer like “Chinese” or “Enchiladas” but late last week to my complete and utter delight follower @dinaholland was sweet enough to share this incredible Mexican flavored salmon recipe!

The Fish Prep:
Turn on your broiler.
Rinse the salmon and place into a pan suitable for broiling.
Place the contents of red pepper jelly jar in a sauce pan on medium heat until liquified.
Brush melted jelly over the fish
Broil for 8-10 minutes or until fish is desired temperature
For the topping:
Chop one red onion, add a bunch of cilantro, a few packages of cherry tomatoes and a can of drained mandarin oranges.

I served this dish with a sauté of green beans. Start cooking them when the salmon goes into the oven. They’ll be hot and ready to plate as the fish is finished.
Place 2 Tablespoons of extra virgin olive oil into a stir-fry pan.
Once the oil is hot (you’ll know when it catches the light there will be little waves on the surface of the oil)
Add the beans and sprinkle with a generous hit of sea salt. This will help the beans release a bit of water (and therefore cook better) as well as flavor the beans.
When they are nearly finished, add a couple cloves of minced garlic, stir a few moments longer – enough to heat the garlic, release the yummy smell, but not so long that the garlic turns brown.
Plate. Serve. E N J O Y!
