Jun 24th 2009 10:30 am Lemon Scented Blueberry Cupcakes

I can’t wait to make these – the recipe is from Cooking Light. The recipe calls for 2% milk. What’s the point though? It’s likely if I am eating cupcakes that I will go whole-hog and use full fat milk in the recipe. Same goes for low fat cream cheese. Bleh! Regardless, it’s a good starting point for a recipe. The mixture of blueberries and lemon on a hot summer day – delish!!

    I wholeheartedly second this! Nothing annoys me more than recipes like that – if you’re going to the trouble of cooking cupcakes, just use the best ingredients you can find! GRRRRR…. I swear that if low-cal/low-fat folks just ate better food, they’d consume more of what’s good and less of what’s bad anyway. Okay sorry Amy, rant over!

    Lisa, just pretend you never knew that low fat cream cheese existed! I fully intend on using all full fat ingredients in this recipe. Seriously, if you’re going for cupcakes, there is no way to be satisfied with anything low fat!
