ABCD’s Easy Strawberry Pie Recipe
Twitter is a pretty cool place because (dependent upon who you follow) you’ve got a stream of real-time “news” flowing across your screen with a push of a button. It is a stream of consciousness. It allows you to tap into what others are doing/thinking/reading/eating right this second. Over the last several days it seems every time I refresh my screen, someone is talking about fresh strawberries -or better yet- what to do with them in a recipe! To the point, I kept wondering if it will become a trending topic like Michael Jackson or Election in Iran -okay, maybe I am exaggerating and it’s not that extreme- perhaps it has to do with the fact that I follow people who I have a lot in common with. When they’re thinking strawberry pie … so am I!

I was going to hold off on sharing this recipe until I got to make it myself with beautiful and fresh “Michigan” strawberries … I just learned that my mom is throwing a pool party on Sunday … what could be better than a strawberry pie for dessert? Perhaps I will share pictures of my finished pie after the party -?- Which reminds me, I have spent a large amount of time the last few days reading the Nikon D70 Digital Field Guide. It is my FULL intention to start taking better photos for this blog o’mine.
Nonetheless, I find myself longing to be one with the “twitterverse” so I will share the recipe today and join this wave of strawberry consciousness so here it is: ABCD’s Favorite (and EASY) Strawberry Pie Recipe
Pie Shell, baked
OR
Graham Cracker Crust
2.5 Quarts of Fresh Strawberries (more or less)
1 Cup Sugar
2 Tablespoons Cornstarch
1 Cup boiling water
1 (3 ounce) strawberry gelatin
In a pan, mix sugar and cornstarch
Add boiling water and cook over medium heat until it thickens
Remove from heat
Stir in gelatin until it becomes smooth
Let cool
Place strawberries in baked shell, whole or sliced.
Pour cooled gel mixture over the strawberries
Refrigerate until set
Top with freshly whipped cream
