Cooking 101: how to clean mushrooms

I always want to cry when I see an image where there is water splashed around the mushrooms – implying that they have actually rinsed them. You may have heard this before, but this m’dears is a big mistake. Mushrooms are like natural sponges. And if you wash a mushroom, it will absorb the water like one.Never soak, or submerge a mushroom in water. When you go to cook them, the texture will be like rubber. The flavor won’t quite be the same. You should never, ever, E-V-E-R wash a mushroom. Seriously, I don’t care how much dirt there is under it’s cap, they can be wiped clean.The long and short of it: The very best way to clean a mushroom is to use a paper towel (or a dry, natural vegetable brush) to wipe off the loose dirt. If you feel you must use water in the cleaning process, simply use a damp paper towel to wipe away the dirt. If you’re looking for a great vegetable brush: My very favorite one is an eco-friendly Coir Vegetable Brush which is totally natural. It’s made from coconut shells, not plastic, or nylon, and doesn’t have a plastic handle like other vegetable brushes on the market.     does this apply even for portobello mushrooms?

    Angie, yes – it applies. You really never need to wash mushrooms.

    At most, a damp towel is needed.

    Thanks for the reminder. I did learn that mushrooms were little sponges in high school, and that dish looks YUMMY!

    Thanks for this! It’s a pet peeve of mine, too. Somehow I wasn’t aware that a vegetable brush exists, and it’s genius! Adding it to my shopping list.
